  • Fresh lime juice – Important! The reconstituted stuff just doesn’t do the trick.
  • Honey Simple Syrup – Fine to use normal simple syrup or just brown sugar.
  • Fresh mint leaves
  • Sparkling water
  • Non-alcoholic rum – This is optional, but it adds a little something.
  • Ice

What is non-alcoholic rum? Is it mandatory?

  1. Place lime quarters, honey simple syrup and half the mint leaves in a glass and muddle them together for 1 minute. Don't pulverise! Muddle just enough to allow the oils to release.

  1. Fill another glass with ice and pour your mudded mixture over the top. Add the non-alcoholic rum.

  1. Top up your glass with sparkling water. Add more honey simple syrup if you prefer a sweeter drink.

  1. Garnish with the remaining mint. Enjoy!
