Place lime quarters, honey simple syrup and half the mint leaves in a glass and muddle them together for 1 minute. Don't pulverise! Muddle just enough to allow the oils to release.

Fill another glass with ice and pour your mudded mixture over the top. Add the non-alcoholic rum.

Top up your glass with sparkling water. Add more honey simple syrup if you prefer a sweeter drink.
