For an extra layer of flavor, start by trimming any excess skin from the chicken thighs. Place the skin in the bottom of the rice cooker and allow the fat to render over low heat. Once the skin has released its golden oil, add minced ginger, garlic, and the white parts of your scallions.


Let these aromatics sizzle gently in the rendered chicken fat, allowing their fragrant oils to infuse the base of the dish. If you have a fancy new rice cooker, put it on chicken rice mode. Otherwise you’ll probably be wanting to cook it for around 45 minutes. The extra fat in the chicken thigh will keep the chicken from drying out.

Prepare the chicken
Trim the excess skin from the chicken thighs. Turn on the rice cooker and add the chicken skin. Let the fat render out of the skin for about 7 minutes.

Add the aromatics
Add the garlic, ginger and the green parts of the scallions. No need to chop the scallions as they are just used for flavour. Let everything cook in the rendered fat for about 5 minutes.

Add the rice and stock
Add the rice and mix everything together. Add the chicken stock. Overall you should be adding slightly less liquid than you normally would in a rice cooker as the chicken will also release a bit of liquid.

Add the chicken and leave to cook
Lay the chicken thighs over the top of the rice. If you have a 'Chicken Rice' mode on your rice cooker, use that. Otherwise, leave to cook for up to 45 minutes until the rice is cooked. Check the chicken is done by poking it with a fork and checking for the juices to come out clear.

Plate up!
